Nut-Free Granola





Okay guys, here's your saint of the day- Saint Nicholas of Tolentino. He was an Augustinian friar and is unofficially the patron saint of vegans and vegetarians because he took a vow not to eat meat. He was known as a kind, gentle man who performed many miracles, such as curing the blind and sick and raising the dead.

I was reading some of the stories about his veganism, Like once when he was presented with a dish of chicken, he prayed over his plate and the chickens flew out the window. In another version of this story, the chickens transformed into roasted vegetables.

I actually like this guy mostly because I have a history of wanting to be vegetarian. Sometimes I just can't stomach seeing the shape of the animal when I'm eating it-like fish and whole chickens. I know that God made animals for us to eat and all that but I'm just not one to enjoy and celebrate killing something and eating it. Anyway, this recipe is definitely meatless and vegetarian, and more importantly, it's delicious!









Nut-Free Granola   

      
total time- 1 hour
Bake time- 45 min

Ingredients:
5 cups Oats
1/3 cup Olive Oil
1/3 cup Maple Syrup
1 tablespoon Vanilla
1 tablespoon Cinnamon
2 Egg whites

Instructions:
1. Preheat oven to 280
2. Mix dry ingredients together
3. Mix wet ingredients exsept the egg whites together
4. Mix the dry and wet together
5. Mix in the egg whites into the granola
6. Bake for 45 min
7. Turn off oven but dont take out granola
8. After cooled take out granola and store
      Enjoy!!!!!!
