Healthy Gingerbread Biscotti



Healthy Gingerbread Biscotti

Cook time-50 min
Total time-1 hour

Ingredients:
2 eggs/egg whites
1/4 cup honey
2 1/2 tablespoons molasses
1/4 cup extra virgin olive oil
1 cup ground up oats/oat flour
1 cup whole wheat flour
1 teaspoon baking powder
1/4 teaspoon baking soda 
3/8 teaspoon salt
2 teaspoons ginger
2 teaspoons cinnamon
1/2 teaspoon cloves
1/4 teaspoon nutmeg
 
 Instructions:
 1. Preheat oven to 350 degrees f. grease or line a cookie sheet with parchment paper
 2. Beat eggs until foamy. Add sugar and beat for 1 min more. Add molasses and oil and beat until combined. 
 3. Add rest of ingredients and stir until just combined 
 4. Pour out onto cookie sheet and form it into a log
 5. Bake for 25 min. Let cool for 10 min, then cut into 14 slices.
 6. preheat oven to 300 degrees f. and bake for 15-20 more min.
      Enjoy!!!
