So my parents have been obsessed with Belvita Breakfast Biscuits lately, specifically the cranberry orange flavor. It all started when my mom got some in a gift basket when she was in the hospital after my little sister was born-so I guess you could call it a post-pregnancy craving.
But I noticed that they could be a little healthier- less added sugar, more healthy fats, less ingredients, etc... So I looked on Pinterest for a copycat recipe(http://www.abountifullove.com/2015/04/breakfast-biscuits-copycat-belvita.html) but I made a few changes that I think helped the texture and the greasy-ness.
Breakfast Biscuits Copycat Belvita(Cranberry Orange)

Ingredients:
1 1/3 cups whole wheat flour
1 cup rolled oats
1/4 cup brown sugar
1/4 cup melted margarine
1/2 tsp kosher salt
1 /8 tsp cinnamon
3/8 cup maple syrup
1/4 cup olive oil
1 tablespoon orange juice
1/4 cup dried cranberries
Directions:
Preheat oven to 325 degrees.
Pour oats into a blender and blend until it resembles flour
Cut dried cranberries into quarters
Combine all the dry ingredients except the dried cranberries
Combine all the wet ingredients
Mix dry and wet together
Add cut up cranberries
Divide the mixture into 40 balls.
Flatten each ball ( use the heel of your hand)
Bake for 15 minutes or until it looks light brown. It may seem soft but will be crispy as they cool

I think these taste and have the same texture as the Belvita cookies. I will definitely make again.
I love this idea! My kids love the cinnamon/brown sugar variety of Belvita cookies but with 6 kids, they get expensive! Not to mention how processed they are! Any ideas of how to make that variety? Maybe just leave out cranberries and orange just and add cinnamon? ps I love that your blog is the “Catholic cook”. Can’t wait to check out the rest of your recipes. I made these last night. Since my husband is diabetic, I made them with an erythritol/stevia sugar substitute and sugar free 'maple' syrup. Otherwise I followed the directions, except for upping the cinnamon and adding orange zest. I tasted the batter once it was done, and couldn't taste orange at all. I thought a tablespoon of orange juice would not add much flavor to a batter like this, and it was right I zested 2 small Mandarin oranges and added the zest.
